For the Twice-Baked Potatoes:
4 large baking potatoes
2–3 tbsp butter
1/4 cup sour cream or cream cheese
1/4 cup milk or heavy cream
1 cup shredded cheese (cheddar or a blend)
2 green onions, finely chopped
Salt & pepper to taste
Optional toppings: bacon bits or red pepper flakes

🔥 1. Bake the Potatoes (First Bake):
Preheat oven to 200°C (400°F).
Scrub the potatoes clean and prick them with a fork.
Bake directly on the oven rack or on a baking sheet for about 45–60 minutes until soft inside.
Let cool slightly, then cut in half lengthwise.
