
scalloped potatoes with smoked sausage
- 3Then dot with about 1/2 of the smoked sausage and 1/3 of the butter. Sprinkle lightly but generously with flour, and salt and pepper. If you don’t care about too much fat, you can add dots of sour cream and sprinkle with your choice of grated cheese but this is not necessary.
- 5 lbRusset potatoes, washed, peeled and sliced thinly
- 1 1/2ropes of smoked sausage
- 1/2 cbutter
- 3/4 call-purpose flour
- salt, to taste
- pepper, to taste
- 8 ozshredded cheese, optional
- sour cream, optional
- 2 canevaporated milk (12 oz each)
- 4Add another layer, just like the first, and continue until potatoes and sausage are used up (usually 2 layers). Finish up with a sprinkling of flour, salt, and pepper.
