Step 1: Preheat the Oven
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper for easy removal.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using). Set aside.
Step 3: Combine Wet Ingredients
In a large bowl, whisk sugar, eggs, and vanilla until smooth. Stir in melted butter (or coconut oil) and crushed pineapple until fully combined.
Step 4: Combine Wet & Dry
Gradually fold dry ingredients into wet ingredients. Mix gently until just combined—slightly lumpy batter is fine and ensures a tender loaf.
Step 5: Bake
Pour batter into prepared pan, smooth the top, and sprinkle turbinado sugar if desired. Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan, then transfer to a wire rack.
Step 6: Serve
Slice and enjoy plain, toasted with butter, or drizzle with a simple glaze (powdered sugar + pineapple juice) for extra tropical flavor.
