Peanut Butter Lunch Lady Bars

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs, beaten
  • 1 ½ cups creamy peanut butter, divided
  • 1 ½ cups unsalted butter (3 sticks), softened
  • ½ cup + 2 tablespoons milk, divided
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 4 cups powdered sugar

 

 

Instructions

1. Preheat & Prep
Preheat your oven to 400°F (200°C). Grease a large cookie sheet or line with parchment paper.

2. Combine Dry Ingredients
In a mixing bowl, whisk together flour, sugar, baking soda, and salt. Set aside.

3. Mix Wet Ingredients
In another bowl, whisk together ½ cup milk, vanilla extract, and beaten eggs.

4. Melt & Blend
In a saucepan, melt 1 cup butter with 1 cup peanut butter until smooth. Remove from heat. Stir in the dry ingredients, then the milk-egg mixture, mixing until well combined.

5. Bake
Spread batter evenly into prepared sheet pan. Bake for 20 minutes, or until a toothpick comes out clean. Cool completely before frosting.

6. Make the Frosting
In a saucepan, bring remaining ½ cup butter and ½ cup peanut butter to a boil. Stir in 2 tablespoons milk, then gradually whisk in powdered sugar until smooth. Spread over cooled bars.

7. Set & Serve
Let frosting cool and set before cutting into squares.
