meatloaf with a tomato beef sauce

My husband and I ate at this little Inn in California and asked what was in the meatloaf. I experimented on my own and came up with this recipe. I made up the sauce on my own and added it to the meatloaf.

This is a basic meatloaf recipe just like mom used to make that’s old-fashioned and full of flavor. There is plenty of filler to keep it together and lots of fresh veggies to add flavor. Ketchup in the ground beef mixture adds a touch of sweetness. You might think of it as just meatloaf, but this one has a great intense beefiness with that special sauce that will separate it from the pack. We love the caramelization the sauce on top gets once this meatloaf is baked. Serve with mashed potatoes and a canned veggie for a budget-friendly easy-to-make meal.

    beef consomme soup (10.5 oz)

  • several drops of Frank’s red hot sauce or Tabasco hot sauce (optional)
