2 large russet potatoes
3 cups vegetable oil (for frying)
1 tsp salt (or to taste)
Instructions:
Wash, peel, and cut potatoes into strips.
Soak in cold water for 30 minutes (removes excess starch).
Heat oil in a deep pan to 350°F (175°C).
Fry potatoes for 3–4 minutes until soft but not golden. Remove & drain.
Increase oil to 375°F (190°C), fry again for 2–3 minutes until crispy golden.
Drain on paper towels and sprinkle with salt.
