1. Preparing the dough:

  1. Mix whole eggs and yolks with powdered sugar and vanilla sugar until white.
  2. Sift the wheat flour into a bowl, add salt, all-purpose flour, and butter. Combine the ingredients using a food processor until crumbly.
  3. Pour in the beaten eggs, baking powder, and sour cream. Quickly knead into a smooth dough.
  4. Wrap the dough in cling film and chill in the refrigerator for about 30 minutes.

 

2. Preparing the apples:

  1. Peel the apples, remove the cores and grate them on a coarse grater.
  2. Place the grated apples in a pot, add the sugar and citric acid. Stir and simmer for 5 minutes.
  3. Remove from the heat, add the lemon jelly and semolina. Mix thoroughly and set aside to cool.
