Vanilla Wafer Cake

 

  • ½ cup Butter, softened
  • 1 (11 oz) box Nilla wafers
  • 1 ½ cups Granulated sugar
  • 6 Eggs
  • ½ cup Milk
  • 1 ½ teaspoons Vanilla extract
  • 1 cup Sweetened shredded coconut
  • 1 cup Pecans, roughly chopped

 

 

How to Make Vanilla Wafer Cake

  • Preheat Oven & Prep Pan: Heat oven to 350°F (175°C). Grease a 10-inch bundt pan thoroughly.
  • Crush the Wafers: Place Nilla wafers in a sealed zip-top bag and crush with a rolling pin until fine crumbs form.
  • Mix Butter and Sugar: Beat softened butter and sugar until light and fluffy (1–2 minutes).
  • Add Eggs: Incorporate eggs one at a time, mixing well after each addition.
  • Add Milk & Vanilla: Stir in milk and vanilla extract until the batter is smooth.
  • Fold in Dry Ingredients: Gently fold in wafer crumbs, shredded coconut, and chopped pecans until fully combined.
  • Bake: Pour batter into the bundt pan and bake 45–50 minutes. Cover loosely with foil the last 15–20 minutes if the top browns too quickly.
  • Cool & Serve: Let cake cool 10 minutes in pan, loosen edges with a knife, then invert onto a plate. Allow to cool to room temperature before slicing.
