- ½ cup Butter, softened
- 1 (11 oz) box Nilla wafers
- 1 ½ cups Granulated sugar
- 6 Eggs
- ½ cup Milk
- 1 ½ teaspoons Vanilla extract
- 1 cup Sweetened shredded coconut
- 1 cup Pecans, roughly chopped
How to Make Vanilla Wafer Cake
- Preheat Oven & Prep Pan: Heat oven to 350°F (175°C). Grease a 10-inch bundt pan thoroughly.
- Crush the Wafers: Place Nilla wafers in a sealed zip-top bag and crush with a rolling pin until fine crumbs form.
- Mix Butter and Sugar: Beat softened butter and sugar until light and fluffy (1–2 minutes).
- Add Eggs: Incorporate eggs one at a time, mixing well after each addition.
- Add Milk & Vanilla: Stir in milk and vanilla extract until the batter is smooth.
- Fold in Dry Ingredients: Gently fold in wafer crumbs, shredded coconut, and chopped pecans until fully combined.
- Bake: Pour batter into the bundt pan and bake 45–50 minutes. Cover loosely with foil the last 15–20 minutes if the top browns too quickly.
- Cool & Serve: Let cake cool 10 minutes in pan, loosen edges with a knife, then invert onto a plate. Allow to cool to room temperature before slicing.
