Shortcrust pastry with pudding and peaches

There’s nothing better than a homemade, fragrant cake that combines the delicacy of pudding, the juiciness of peaches, and the crunch of a crumbly topping. This cake is perfect for any occasion—a family dinner, a get-together with friends, or an afternoon coffee. Preparing it is easier than you think, and the taste will make every minute spent in the kitchen worthwhile!

Ingredients:

For the shortcrust pastry:

  • 2 cups of semolina flour
  • 1 cup cake flour
  • 4 egg yolks (save the whites for later)
  • 3/4 cup of sugar
  • 2 teaspoons of baking powder
  • 3/4 cup oil (e.g. rapeseed)
  • 2 tablespoons of cream (preferably 18%)

For the filling:

  • 4-5 fresh peaches (or canned peaches for winter)
  • 2 cream puddings with sugar
  • 1 liter of milk
