Let steaks come to room temperature. Pat dry with paper towels.
Season generously with salt and pepper.
Heat a heavy pan (cast iron preferred) over high heat with oil or butter.
Sear steaks 2–3 minutes per side (or more, depending on thickness and doneness).
Add garlic and herbs during the last minute for extra flavor (optional).
Let steaks rest for 5 minutes before serving.
