While the peanut butter balls are chilling, melt the chocolate chips and coconut oil (or butter) together. You can do this in the microwave in 20-second intervals, stirring after each interval, or melt the chocolate in a heatproof bowl set over a pot of simmering water (double boiler method). Stir until the chocolate is completely smooth and melted.
6. Dip the Balls in Chocolate:
Once the peanut butter balls have firmed up in the fridge, take them out and dip each one into the melted chocolate. You can either fully coat the ball or dip just half of it for a fun, swirled look. Use a fork to lift the balls out of the chocolate and allow the excess chocolate to drip off before placing them back onto the parchment paper.
7. Let the Chocolate Set:
After dipping all the peanut butter balls in chocolate, place the baking sheet back into the fridge for another 15-20 minutes, allowing the chocolate to set and harden.
