
Nun’s Puffs – The Heavenly Old-Fashioned Treat That’s Crispy, Custardy & Impossible to Forget

Preheat oven to 375°F (190°C). Generously grease a muffin tin (important — these puff up quite a bit!).
Heat the butter and milk:
In a saucepan over medium heat, melt the butter in the milk and bring just to a boil. Remove from heat.
Add the flour:
Quickly stir in the flour and a pinch of salt until the mixture forms a smooth dough and pulls away from the sides of the pan (like pâte à choux).
Cool slightly:
Let the mixture cool for 5 minutes. Then beat in the eggs one at a time, mixing thoroughly after each addition until smooth and glossy. (You can use a mixer or elbow grease!)
Optional sweetness:
Stir in 1 tbsp sugar if you want a hint of sweetness in the base.
Fill and bake:
Spoon batter evenly into the muffin cups, filling each about halfway — they’ll rise a lot! Bake for 30–35 minutes or until puffed and deeply golden brown.
Serve warm:
Enjoy as is, or top with honey, powdered sugar, or even jam for a delightful treat.
