Instructions
Step 1: Preheat and Prepare the Pan
Set your oven to 350°F (175°C). While it warms up, grease a 9×5-inch loaf pan with butter or non-stick spray. For easier cleanup and perfect edges, you can also line the pan with parchment paper, letting the sides hang over for easy lifting.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together:
- 1¾ cups flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon (if using)
Mix until evenly combined, then set aside.
Step 3: Prepare the Wet Ingredients
In a large mixing bowl, whisk together:
- ¾ cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
Whisk until the mixture is smooth and slightly pale. Then add:
