Instructions:
Step 1: Preheat Oven
Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.
Step 2: Prepare the Rice Mix
In a large bowl, combine the cooked brown rice, black beans, corn, diced tomatoes, onions, and bell peppers.
Add the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine.
Step 3: Assemble the casserole:
Spread half of the rice mixture evenly in the prepared baking dish.
Drizzle with half of the sauce and sprinkle with half of the grated cheese.
Repeat with the remaining rice mixture, sauce, and cheese to create layers.
Step 4: Bake the dish.
Cover the dish with foil and bake for 20 minutes.
Remove the foil and bake for 10 to 15 minutes more, or until the cheese is bubbly and lightly browned.
Step 5: Garnish and serve.
Remove from the oven and let cool for 5 minutes.
Garnish with freshly chopped cilantro before serving.
