Marshmallow

Pour about 1/4 cup of cold water over the gelatin. Stir and set aside to swell.

Melt the butter in a saucepan. Add the sugar and cocoa. Once combined, add the cream and whisk until combined. Bring to a boil, then immediately remove from the heat. Add the gelatin to the icing and mix thoroughly. Set aside.

Pour the cooled icing over the cake, smoothing it out, and set aside in a cool place to set completely.
