Lotus Biscuit Pancakes with Fruit & Cream

Instructions
1. Make the Pancakes
In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat egg, milk, melted butter, vanilla, and Lotus spread.
Combine wet and dry ingredients, mixing gently (do not overmix).
Heat a non-stick pan, lightly grease, and cook pancakes on medium heat — about 2 minutes until bubbles form, then flip and cook 1 more minute.
Stack pancakes on a plate.
2. Add Toppings
Drizzle whipped cream (or yogurt) generously over the pancake stack.
Decorate with halved strawberries, blueberries, and raspberries.
Sprinkle nuts and crushed Lotus biscuit on top.
Finish with one whole Lotus biscuit and a light dusting of cocoa powder.
