**Instructions:**
1. Wash the lemons thoroughly and peel them with a vegetable peeler. Be sure to use only the yellow part of the peel; avoid the white part, as it can have a bitter taste.
2. Place the lemon peels in a large glass jar and pour pure alcohol over them. Seal the jar tightly and set aside in a cool, dark place for at least 4 weeks to allow the alcohol to infuse with the lemon flavor.
3. After 4 weeks, bring a pot of water to a boil and add the sugar. Stir thoroughly until the sugar is completely dissolved, then set the water and sugar aside to cool.
4. Strain the lemon peels from the alcohol and add the sugar water. Mix well.
5. Pour the limoncello into bottles and seal tightly. Refrigerate the limoncello for at least a week before serving to allow the flavors to blend.
6. Serve chilled as a digestif after a delicious meal. Enjoy!
