Instructions
In a blender, blend the eggs, sugar, oil, chopped carrot, whole milk, fine cornmeal, salt, and shredded coconut until smooth. Add the baking powder, beating lightly just until incorporated.
Pour the batter into a rectangular pan (29 cm x 20 cm) lined with margarine or oil.
Gently tap the pan to remove any airflow and bake in a preheated oven at 180°C for 30 minutes.
