
grammie’s coconut pie
- 3Beat egg whites until foamy. Add sugar, 2 Tbsp at a time, beating after each addition until whites stand in peaks.
- COCONUT FILLING
- 4 Tbspgranulated sugar
- 5 Tbspcake flour
- 1/2 tspsalt
- 2 cmilk
- 3 lgegg yolks, slightly beaten
- 1 1/2 cshredded coconut
- 2 tspvanilla extract
- MERINGUE TOPPING
- 2 lgegg whites
- 4 Tbspgranulated sugar

Spoon your meringue on top and spread out to the edges of the crust. Then, use a knife or spatula to form peaks on the pie. Add a small amount of coconut on top and bake in a 350 degree F oven for 10 minutes until browned.
