Garlic Parmesan Chicken Meatloaf

 

 ½ cup mayonnaise
 ½ cup shredded Parmesan cheese
 1 tablespoon garlic paste or 2 cloves garlic, minced
 1 teaspoon Italian herbs
 Salt and pepper to taste

Steps

Preheat your oven to 375°F and line a baking sheet with parchment paper. If you prefer using a loaf pan, lightly grease it – this is going to be one amazing meatloaf!

In a large bowl, gently combine the ground chicken, grated Parmesan, breadcrumbs, eggs, minced garlic, grated onion, milk, Dijon mustard, Worcestershire sauce, Italian seasoning, salt, pepper, red pepper flakes (if using), and fresh herbs. Mix just until combined – don’t overwork it or you’ll have tough meatloaf!

Transfer the mixture to your prepared baking sheet and shape it into a firm, even loaf about 8 inches long and 4 inches wide. It should look beautiful and uniform!

In a small bowl, stir together the mayonnaise, shredded Parmesan, garlic paste, Italian herbs, and a pinch of salt and pepper. This glaze is going to create the most amazing golden, cheesy crust!
