Fluffy Vanilla Sponge Cake Recipe

🧁💁‍♂️Instructions:
• Preheat oven to 170°C (340°F).
• Line or grease an 8-inch round or square cake pan.
• Sift together flour, baking powder, and salt in a bowl. Set aside.
• In a large bowl, beat eggs using an electric mixer on high speed for about 5–7 minutes, until light, fluffy, and tripled in volume.
• Gradually add sugar, a little at a time, while beating. Mixture should form ribbons when lifted.
• Gently mix in vanilla extract, warm milk, and oil.
(Tip: mix milk + oil together before adding for even blending)
• Sift the flour mixture over the batter in parts (2–3 additions).
• Gently fold with a spatula using light motions — don’t overmix or you’ll deflate the batter.
• Pour the batter into your prepared pan. Tap gently to release air bubbles.
• Bake for 25–30 minutes, or until a toothpick inserted comes out clean and the top is lightly golden.
• Let the cake cool in the pan for 10 mins, then turn out onto a wire rack to cool completely.
