4 cups water (enough to submerge cabbage)
For the seasoning paste:
2 tablespoons Korean red chili flakes (gochugaru) β adjust to taste
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons fish sauce (or soy sauce for vegetarian version)
1 teaspoon sugar (balances the spice)
2 green onions, sliced thin

1 small carrot, julienned
1 small daikon radish, julienned
