Make crust: mix flour + butter until crumbly, add water, form dough. Chill 1 hr.
Slice apples and toss with sugar, flour, cinnamon, nutmeg.
Roll dough, line pie dish, fill with apple mix, top with crust.
Brush with egg wash, cut small slits.
Bake at 375°F (190°C) for 50–55 minutes until golden brown.
