SUBSTITUTIONS: Use pre-cooked chicken to save some time – about 5 to 6 cups is needed.
TIPS: If you don’t have an ovenproof skillet just transfer everything to a greased casserole dish.
SERVING SUGGESTIONS: This is really good topped with avocado, guacamole, sour cream, or salsa. You can also serve over rice or cauliflower rice, or in flour tortillas.
