Baked Tortilla with Spinach, Tomatoes and Mozzarella

👩‍🍳 Step-by-Step

1. Prepare the oven and the onion base

Preheat the oven to 200°C (400°F) and let it preheat.

Meanwhile, heat the oil in a nonstick pan and add the finely chopped onion. Let it soften gently: after a few minutes, it will become translucent, releasing a mouth-watering aroma. When it begins to brown, it’s ready.

2. Prepare the egg mixture

In a large bowl, crack the eggs and beat them vigorously with a fork or a hand whisk. Add a pinch of salt and freshly ground pepper. Add the browned onions, which will give it a sweet and bold flavor. Mix well: the filling is ready!

3. Assemble the tortilla

Take a baking dish or ovenproof pan and line it with parchment paper.

Place the tortilla on the bottom: it will be your crispy base. Pour half of the egg and onion mixture, distributing it evenly.

Now add a layer of fresh spinach, a few slices of cherry tomatoes, and a generous handful of mozzarella.

Cover with another tortilla and repeat the process with the remaining ingredients. Finish with a final sprinkling of mozzarella on top: it will create that golden, stringy crust that makes the tortilla irresistible.

4. Baking

Place the pan in the preheated oven and bake for about 15 minutes. When you see the mozzarella melt, form small bubbles, and brown slightly, the dish is ready to eat.

5. Serve and enjoy

Remove the tortilla from the oven and let it rest for a few minutes: it will be easier to cut and the flavors will blend better.

Cut it into wedges like a pizza and serve immediately, while it’s still hot and the mozzarella is melting in each slice.

💡 Tips and variations

You can enrich the tortilla by adding sautéed mushrooms, grilled zucchini, or cooked ham.

If you love bold flavors, a sprinkling of oregano or chili pepper will add extra character.

You can also prepare it ahead of time and reheat it just before dinner: it will still be delicious!
