Avocado & Egg Power Salad

Ingredients
🥑 1 ripe avocado, diced
🥚 2 boiled eggs, halved
🌱 2 cups arugula (or mixed greens)
🧂 Salt & cracked black pepper to taste
🌿 Optional: fresh parsley, dill, or chives
Steps:
Boil eggs, let them cool, and slice in half
Dice avocado and season with salt and pepper
Add arugula to a bowl, then top with eggs and avocado
Garnish with herbs of your choice
Drizzle with olive oil or your favorite dressing
