Jamaican Oxtail SMASH OR PASS!

Ingredients:

  • 3–4 lbs beef oxtails, trimmed

  • 2 tbsp vegetable oil

  • 1 large onion, chopped

  • 3 garlic cloves, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 tbsp tomato paste

  • 2 cups beef broth

  • 1 cup red wine (optional, can sub with more broth)

  • 2 tbsp soy sauce

  • 1 tbsp Worcestershire sauce

  • 2 sprigs fresh thyme (or 1 tsp dried)

  • 2 bay leaves

  • Salt & black pepper, to taste
